I used to think hummus was a party food, something you set out with pita chips when people come over and then never think about again until the next gathering.

Confession: it took me embarrassingly long to realize hummus has real protein in it and isn’t just beige mush for scooping carrots through. Once that clicked, my lunch situation changed a lot.

So I went digging, because that’s what I do all day anyway, and pulled together a list of ways to actually build a lunch around hummus instead of just plopping it next to a sandwich.

1. Hummus and Veggie Wrap

Spread a thick layer of hummus on a tortilla, pile on whatever vegetables are wilting slightly in your crisper drawer, roll it tight. This is the one I default to when I have not planned anything else.

A big scoop of hummus in the bottom of a bowl, then cucumber, tomato, olives, and feta scattered over the top. My neighbor Marlene does this one on repeat because it needs almost no chopping.

Toast, hummus, a shake of everything bagel seasoning on top. That’s it, that’s the idea. I add a soft-boiled egg on top some days when I want it to feel more like an actual meal.

Roast a second batch of chickpeas separately from the ones in your hummus, crispy and seasoned, and scatter them over a bowl with more hummus and greens underneath. It sounds redundant putting chickpeas on chickpeas and it kind of is, but the texture contrast makes it work.
