1. Mason Jar Salads Layered for Freshness

You need: Wide mouth jars, dressing, hearty greens

The trick with mason jar salads is layering, dressing on the bottom, then grains, protein, and finally the greens on top so nothing gets soggy before you get to it. Shake it into a bowl at lunchtime and you have got yourself one of the easier cold lunch ideas for work that I have come across.

I like making three or four of these at once so the whole week is basically handled in one sitting.

2. Big Batch Grain Bowls

You need: Rice or farro, roasted veg, a sauce
