I used to think hummus was a party food, something you set out with pita chips when people come over and then never think about again until the next gathering.
Confession: it took me embarrassingly long to realize hummus has real protein in it and isn’t just beige mush for scooping carrots through. Once that clicked, my lunch situation changed a lot.
So I went digging, because that’s what I do all day anyway, and pulled together a list of ways to actually build a lunch around hummus instead of just plopping it next to a sandwich.

Spread a thick layer of hummus on a tortilla, pile on whatever vegetables are wilting slightly in your crisper drawer, roll it tight. This is the one I default to when I have not planned anything else.

A big scoop of hummus in the bottom of a bowl, then cucumber, tomato, olives, and feta scattered over the top. My neighbor Marlene does this one on repeat because it needs almost no chopping.

Some days you don’t want a dish, you want a plate of things to pick at. This is basically one of my go-to snack box lunch ideas adults can throw together with zero planning: hummus in the middle, vegetables and a few crackers around the edge.

Bake the sweet potato ahead, split it open at lunch, top with hummus and a few extra chickpeas for crunch. This one takes actual planning the night before, which I don’t always manage, but when I do it’s worth it.
